    Gellan gum is a functional gelling agent that can transform liquids into a gel state. It exists in two forms - high acyl and low acyl. Gellan gum is an off-white hygroscopic powder. Gellan gum has a density of 1.5-1.6 g/cm3. High acyl gellan gum dissolves rapidly in water to form a clear solution when heated. As the solution cools, gellan gum begins to gel, forming a firm, elastic, and clear gel. Low acyl gellan gum forms brittle, non-elastic gels. Gellan gum is widely used in food processing applications.
